Ingredients:
1 cup rice
4 cups water or chicken broth
1 chicken breast, boneless and skinless
1-inch piece of ginger, peeled and sliced
2 cloves garlic, minced
Salt and pepper to taste
Optional toppings: chopped green onions, fried shallots, soy sauce, sesame oil
Instructions:
Rinse the rice under cold water until the water runs clear. Drain and set aside.
In a pot, bring the water or chicken broth to a boil over medium heat.
Add the chicken breast, ginger slices, and minced garlic to the pot. Let it simmer for about 15-20 minutes, or until the chicken is cooked through and tender.
Remove the chicken from the pot and shred it using two forks.
Add the rinsed rice to the pot with the broth. Stir well and reduce the heat to low. Let it simmer gently, stirring occasionally to prevent sticking, for about 30-40 minutes or until the rice is cooked and the porridge has reached your desired consistency. If it becomes too thick, you can add more water or broth.
Once the rice is cooked, return the shredded chicken to the pot. Stir well to combine.
Season the porridge with salt and pepper to taste.
Serve the chicken porridge hot, garnished with chopped green onions, fried shallots, a drizzle of soy sauce, and a splash of sesame oil, if desired.
