Chicken soup is so versatile. I usually use this to make child-friendly mee soto, macaroni soup, chicken rice soup, chicken porridge. The secret to this is to make the chicken broth properly.
Ingredients:
- chicken feet
- chicken bones
- chicken
- 1 holland onion
- 3 cloves Garlic
- carrot (chopped)
- celery (chopped)
- tomato
- fried shallots
- corriander leaves
Instructions:
1) Heat up a small pot at medium heat. Add in chicken bones and chicken feet. Mix until they are well heated up.
2) Add room temperature or cold water to the desired amount. Usually I will cover till 1 inch above the chicken.
3) Boil high for 20 mins. Then, reduce the heat to add in the vegetables and tomatoes. 4) Sieve the chicken bones out. Add corriander And fried shallots and turn off the heat.
5) I do add a bit of salt for my older kids at this point. Serve with Macaroni!
